Summary: God Send for South Beach Dieters
My husband and I are so thankful for this book. We did South Beach before, but stopped about a year ago because the recipes were just so darn time consuming and complex, and with an infant daughter and full-time jobs, we were tired of a diet that required so much work in the kitchen. When we saw this book had come out, along with the dining out guide, we decided to give it another go, and in less than 2 months we are both nearly down to our goal weights. The recipes in this book feel even less like a diet than the original cookbook. They are so yummy. We like the shrimp stir-fry, turkey parmesan and catfish. And the chips with black bean dip is far better than any bean dip I've ever bought pre-packaged from the store. The recipes are all super easy, especially if you do prep work the evening before. Usually it takes us no more than 20 minutes to get a delicious dinner on the table. And the beginning of the book lists tons of snack and quick meal ideas. I like topping a flat whole-wheat tortilla with pesto, shredded mozzarella and cooked chicken strips, and then baking like a pizza.

As with the original cookbook, you really don't get into the more delicious recipes until phase 2. And there is a bevy of standard ingredients and spices you should stock up on before starting this diet, which will result in a pretty large grocery bill at the get-go. But soon the South Beach diet becomes a way of life. It doesn't feel like you are dieting. It just feels like you are eating healthy, fresh meals. Best wishes to all the dieters out there.

I just bought this book a few weeks ago to add to my collection and I can say that it is wonderful. It has so many tasty ideas and they use easy quick ingredients. It truly is quick and easy. I would recommend this book over the other South Beach cookbook. Be sure and check out the introduction book to the South Beach way of life.
Summary: It was a real eye opener
The author's suggestion about reducing caffeine intake was helpful. My physician told me it caused me acid indigestion. He recommended a book called "The Truth About Caffeine: How Companies That Promote it Deceive us and What We Can Do About It. The book pays particular attention to the effects of coffee and caffeine on women and children. Some studies have shown that excessive coffee drinking can lead to fertility and pregnancy problems, birth defects, low birth weight babies or SIDS, as well as fibrocystic breast tumors. It was a real eye opener, I'll say. It's highly recommended.

Summary: Great Addition to Your Cookbook Library.
I like Ms. Ray's recipes. Many of them remind me of the SicilianCajun meals that my Big Daddy(Mom's Stepdad) from South Lousiana used to cook for us when I was a kid. Her Italian recipes lack the high fat but have all the flavor of my Big Daddy's(especially if you add a little cayenne).

Most of the meals can be cooked in 30 minutes or less which means that when I come home from work and my stay at home wife hasn't cooked dinner I can "Iron Chef"(Food TV Addict) one of Rachael's recipes with ingredients on hand before the kids get restless.

My favorite was the Spaghetti Aglio Olio (Garlic and Oil) except I used Anchovy paste instead of the fillets to hide them from the wife and kids (Thanks Big Daddy for putting anchovies in my bottle!). Served with a side of Caesar Salad it made a great sunday meal.

Another Favorite was the Peasant Soup. Be sure to serve with some tasy Artisan Bread and save a drop of red wine for the final bite.

The only drawback to the book is that some of the ingredients in a few of the recipes are a bit pricey and others can only be found in specialty stores or in ethnic markets (a big drawback if you don't live near a big city). I would only use these for special occasions.

Lots of great ideas and I love her "down to earth" personality.
Summary: GOOD RECIPES BUT.......
There are just an endless number of quick and easy cookbooks in the marketplace today, so in that respect this one fits in with the rest. What I did like about the book was the actual recipes. The Oregon-style pork chops with cranberries was one of my favourites, but the Chipotle chili did not just stick to my ribs, it almost burnt them! These are 30-minute meals, more or less, and the recipes overall are quite good. The recipes do make suggestions for substitutions, which was convenient and helpful.

What I did not like about the book was the way it was laid out. It was like encountering a maze and you wondered where to go next. There were other bits of info added that, to me, only got in the way. One recipe can make more than one meal and it can take you just as long to decipher the recipe as it can to actually prepare the meal. For that reason, the book rated middle of the road - good recipes, terrible organization.

This is like the "new" Betty Crocker cookbook for the new millineum. Healthy, tasty ideas and recipes. Love the spiral pages. Easy to read and would definetly recommend this book.

I've been on Weight Watchers since the end of Oct 2005 and have successfully lost 56 lbs so far. Sometimes it's hard to find good, healthy recipes that my non-WW'er husband (who is also a picky eater) will enjoy, too.
My mom bought me this cookbook for my birthday and so far we have tried out a couple recipes already.
There are so many recipes in this cookbook that even picky eaters will enjoy!
I love the fact that not only are points listed on each recipe, but also the nutritional value per serving. And core recipes are indicated, also!
I believe this cookbook is useful for any person who wants to cook healthy recipes - whether they are on Weight Watchers or not!
Summary: Great WW Recipes
I have this book and the WW 365 Day Menu Cookbook. This one is my favorite of the two. The recipes in this book seem more sophisticated. This is important to me because sometimes I crave a good restuarant meal.

This book has modern recipes that are good. I do have to adjust the seasonings because I find them on the bland side, but there are few cookbooks where I don't have to doctor the recipes.

This book has useful nutrition info and healthful eating tips for everyone; you don't have to follow WW to enjoy this book. A note to current WW users: the POINTS used in this book are figured on an older POINTS system, so you'll have to do the calculations on your own.

Summary: Excellent cookbook -- I wish they were all this good
This is a TERRIFIC cookbook, thoroughly covering all things related to the slow cooker with some nifty little extra morsels thrown in. It's a BIG, THICK book, the design is *excellent* and the writing style is a bit chatty but informative. Compared to the two other slow cooker cookbooks I ordered, this is easily head-and-shoulders superior, there's no real comparison. THIS IS THE ONE YOU WANT!!!
Summary: Great recipes and superb cooking lessons
This was a book I bought when I purchased an oval 6.5 quart Rival slow cooker. It was a smart move. The Carolina Pork is wonderful. All the recipes look so good. The instructions and methods are clear and a pleasure to read. I really appreciated that the differences between slow cooking and oven or stovetop cooking are specified. It was really helpful to get instructions for adapting recipes to the slow cooker too.

The book has been totally accurate in what to expect. I highly recommend this book to all good cooks.
Summary: Excellent Cook Book!
I am one of "those people" who love reading cook books. This is topping the list of my favorites. While there are no pictures, the introductory narratives for each dish are rich with background and helpful tips. Ditto on all the other reviews...this is not the dump type of cookbook. But it gives enough guidance that you can adjust and modify A LOT. The recepies for shorter timing - the ones you cannot plan for during the work week - are good for the weekend.

On Sunday we went out of town for most of the day, so before we left I took the Lentil and Red Pepper Soup and re-arranged it, substituting white wine for some of the broth, subbing green for the red pepper, adding more paprika than called for and adding chopped portobello mushrooms and Italian hot turkey sausage. I probably cooked it longer than the book recommended, and it came out this intense deep brown stew, but when I tasted it for lunch it was LOVE pure LOVE!

Summary: My everyday book
This one went on top of all my books and
I have some very good. Being a new diabetic person ,I had to learn and it is great what you can do, and so good and of course healty, I use it everyday. Well worth it.
Summary: Practical and Educational

I am surprised by the ingredients used in this book. I always thought that as a diabetic I must avoid most carbohydrates. It is helpful to also have some medical advice included in the cookbook. Advice from people who have diabetes offers inspiration and great ideas on dealing with this chronic disease. Another great book that I suggest for all diabetics is "Cure the Incurable". It does contain a wealth of information on diabetes and other incurable diseases. I think it is a very good addition to Diabetes Cookbook. As the author states at his website StartHealthyLife : "Educate yourself before you medicate yourself!"

Summary: Am I missing something?
Maybe my Zoji neurofuzzy (NS-ZCC10) is defective, but I can't do with it what these authors say I should be able to do.

1. They say I can make polenta by running two sequential porridge cycles. However, I get an error code when I try to do this. I have to allow rice cooker to cool down first, before running a second cycle. (BTW, one porridge seemed PLENTY for the polenta. It was very good!)

2. When I try to saute onions in the pan for pilaf, the pan never seems to get hot enough before it turns off, then I can't go back and run a rice cycle till the unit cools down again!

Maybe the neurofuzzy is really too "sophisticated" for some of the tricks these authors use.
Summary: Great, But Not Foolproof
While I love this cookbook, I'm going to tell you about the problems so you can get better results from it.

1. Measuring is a challenge! Depending on your rice cooker, liquids can be measured three ways: using the rice cooker cup, by the marks inside your rice cooker bowl, and by a standard measuring cup [8 fl oz.]. Dry ingredients can be measured by either the rice cooker cup or by a standard dry ingredients measuring cup. Before beginning any recipe, make sure you know what measures are being used, and do not make any recipe for the first time when company is coming over, in case you need to adjust it. Based on numerous recipe failures, I think the writers sometimes mixed up the measurements. They definitely could have made the information clearer in each recipe. How about a revised edition? ;)

2. Some recipes, polenta for example, have overly long cooking times, such as two porridge cycles back to back, or 90 minutes. Polenta cooks on the stovetop in 20 minutes; even a single porridge cycle is too long. Feel free to cut cooking times short.

3. When cooking oatmeal, polenta, grits, etc. with the porridge cycle, open the cover up, and leave it up, once the contents reach a simmer. If you don't, starchy lava will flow out of the vent and make a horrible mess, hot liquid may shoot out, and the recipe may be ruined as a result. If your rice cooker starts to spit, use extreme caution when you open the lid, as the hot contents may splash and burn you.

4. If a recipe says you can skip pre-soaking for tapioca, beans, etc., don't. Your final results will be much better using a traditional overnight soak in cold water.

5. When making risotto, don't perform the first step, briefly sautéing the rice in oil, in the rice cooker. Because rice cooker bowls are narrow and deep, the rice will be steamed, and your risotto will be mush. Instead, sauté the rice as usual in a large flat frying pan, then transfer the contents to the rice cooker bowl. Also, use the variety of Arborio called Carnaroli, as it holds up the best.

6. Use an easy to clean rice cooker; mine is the Panasonic from Williams Sonoma. You can avoid lingering odors--even from cinnamon and curry--if you can take the top completely apart and wash it each time. Soak the parts in cool water, not hot, and they should clean up easily. If odors remain, put two or three cups of cold water in the rice cooker and run it through the regular cycle, taking care that it doesn't cook dry. By cups, I mean 8 fluid ounces. ;) Then let it cool, take it apart as much as you can, and let the pieces dry completely in a dish rack.

7. No recipe is foolproof! Variances in rice crops, local water, and rice cookers will affect the outcome. If it doesn't work the first time, make adjustments and try again.
Summary: Works great with my little 4 cup on/off rice cooker.
I use this cookbook more than any of my others. Everything I have made from here has turned out excellent, and I have tried at least 25 of the recipes. Probably more now that I think about it. I just have a little 4 cup on/off machine and it's big enough for most of the recipes, and for the whole meal section I cut the recipes in half. I don't make the recipes that call for the fuzzy logic cooker in my on/off rice cooker, but they turn out great on my stove or in my slow cooker. A hint though: If you have more than three people at dinner you may have to double the rice recipes.

Summary: This looks like a good one.
I can't wait to try more of the recipes in this book. I have a lot of cookbooks, and many of them contain recipes I know I will never make, either because they're too complicated or just don't appeal to me, period. This book, however, lists recipes that are generally short and simple, and the food items look very down-to-earth and appetizing. I bought the book in the first place because several of my friends at work said it was their favorite and contained honest-to-goodness "real" food and meals their families like. I think they're right about that.
Summary: Ya'll are gonna love it!
I got this cookbook a while back from Amazon, and read it cover to cover. Made the famous ooey gooey butter cakes, and they are good and probably need to be called bar desserts, as it is not really a cake.
We visited her famous restaurant in Savannah last week after a drive from Florida, and must say it was worth the detour off of I95. The fried chicken, collards , hoecakes and biscuits were great. as was her chocolate cake and banana pudding.
This is a fun book and if you love Paula Deen , you will enoy it . You can almost hear her talking the way she does on her show. I love how she says Oil and Boil, also the way she takes a big old fat bite of her food and closes her eyes and you can almost taste it!
Summary: Great cookbook
I got this cookbook for Christmas because I am a fan of the show. I was nervous because all of the recipes are so filled with fat. Lots of mayonaisse. I have made a few things from here that were great. The meatloaf was a big hit as was the potato casserole. I dont suggest the hot chicken salad as that was WAY too much mayo. It oiled up and down the sides of my pan. Not good.

What I like best about the book are the variety of recipes. There truly is something for everyone. It is a great "reach for" cookbook that I will use again and again.

Summary: great cookbook!
After 35 years of cooking, I don't buy cookbooks anymore. I bought this one for my daughter because a friend recommended it. Before I had a chance to give it to her, I looked through it, and the more I looked, the more I was fascinated with this book. It gives detailed information about cooking methods, commom mistakes to avoid, test results for many everyday kitchen products, and much much more. I tried a few of the recipes and they really tasted good. Whether you are just learning how to cook or have been cooking for a long time, this is a great book to have. I will buy this one for myself as well.

I have had this Cookbook since December and it hasn't failed me once. In mine and my family's opinion the "Big and Chewy Chocolate Chip Cookie" recipe on Pg.593 is worth the price of the whole book! A bonus for me was the fact that almost every page has a "Test Kitchen Tip" to help improve whatever recipe it is you are making. It also has a good amount of info on what brand of cooking tools work the best and the price of the product and how it preformed (and it's not always the most expensive product that gets the green light!) I would Highly suggest this book to anyone who loves cooking great meals! It's great fo Beginners, intermediates or advanced cooks! Trust me you won't be dissapointed! Amazon has the best price for it too! I sure wish I would have known that before I spent $34.95 for it at Target!
Summary: Great General Purpose Cookbook
This is a terrific all-purpose cookbook. It contains a wide range of recipes, and my family has enjoyed every one we have tried. One thing I really appreciate is that they've included some slightly more advanced techniques aren't included in other basic cookbooks. Brining, for example, is an easy technique that can really improve some of your meat dishes. It's all explained in the cookbook.

The cookbook is similar to Better Homes, or Betty Crocker, but with a little nicer recipes and tips that help you shine in the kitchen. The recipes aren't overly involved, like Joy of Cooking or Gourmet can sometimes be.

The hardcover and spiral is nice. Each divider tab lists all the recipes in that section, which I find a nice convenience. If you know you want veggies, but not sure which, you can scan the recipe list on the divider tab to give you some ideas.

The section on selecting kitchen tools is interesting and could be really useful for a new cook. I also enjoy the ratings of cooking staples sprinkled throughout the book. Some of the recommended products aren't available on the West coast, but most are.

My son took my copy to his first apartment, and he's so happy to have a reference for cooking eggs, veggies, meats, etc. for himself and his room mates. Now I have to order myself a new copy!
